Usually, onion rings are loaded with calories and carbs. This low-carb, gluten free, onion ring recipe was a success in our home.

Ingredients you will need:
- 2 large onions
- 1 cup gluten free bread crumbs
- 1/2 cup Parmesan cheese
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 2 eggs
Directions:
- Preheat oven to 400 degrees
- Wash and clean the onions. Slice into rings. Remove any skin between the layers of onion.
- Combine all dry ingredients together in a bowl.
- Stir together your two eggs in a separate bowl.
- Dip a single ring, first into the egg mixture, then into the bread crumb mixture.
- Place on a parchment lined baking sheet.
- Bake for 20-25 minutes. Turn onion rings at the halfway mark, about 12 minutes. Remove from oven when onion rings are browned to your liking.
The onion rings were delicious. The bread coating had a nice texture. The larger sliced onions still had a nice, crispy bite to them. Without being too crisp, as in biting in to a raw onion.
It will be fun to change and add different spices to the bread crumb mixture. Such as thyme or even spice them up a bit with some paprika. The combinations are endless.
